The Anatolian kitchen has accumulated valuable traditional knowledge on low waste and sustainable practices over centuries. Ask any Turk about the aubergines their grandmothers would dry on balconies, the delectable desserts they would make out of extra sweet goods left around the house, or the many, many uses for leftover bread!

Join us at Yunus Emre Institute London for a masterclass with Chef Ali Açıkgül on tasty, easy, and zero-waste recipes that adorn the Turkish culinary tradition. Three delightful recipes will be prepared in this workshop:

  • Asmalı Pilav (Grape Leaf Pilaf): Asmalı pilav is a classic Turkish dish made with grape leaves, rice, and aromatic spices. The grape leaves impart a unique flavour to the pilaf. In English, it’s known as Grape Leaf Pilaf.
  • Pirpirim (Purslane): This is a hearty dish from Malatya, made with regional dried herbs and pulses. The use of these traditional ingredients not only adds depth and complexity to the flavor of the dish, but also makes it a nutritious and satisfying meal.
  • Herle (Molasses Dessert): Herle is a nutritious and energy-giving dessert made with molasses.
